Masala French Fries



















Masala French Fries – A deep fried snack. Rich in taste and high in calories. Addictive too. Basic recipe from Classic Indian Vegetarian Cookery by Julie Sahni !!

Serves: 2 – 3

Ingredients

2 medium size potatoes

2 cups water

6 curry leaves (optional), wash and gently wipe with a kitchen towel

200 ml oil

Spice powder (a mix of 1/2 teaspoon red chili powder + ½ teaspoon salt (or to taste , minimum ¼ teaspoon) + ¼ teaspoon hing (asafoetida)

Method

Wash and peel off the skin of the potatoes. Cut it into match stick size or Normal French fries or smaller than normal French fries. Wash again until the water is very clear.

Boil 2 cups of water and soak / immerse potato slices in hot water for 2 hours. Cover and keep aside.

Drain and pat thoroughly  dry on layers of paper towels or wipe gently with a clean and soft cotton towel.

Heat oil in a frying pan / karahi on high heat. Reduce the heat to medium  and deep fry potato slices in batches until crisp and golden color on both the sides.

Drain out from oil and place it on paper towels to absorb extra oil. Sprinkle spice powder (in batches) when it is very hot. Gently toss it with the help of a tablespoon.

Finally deep fry curry leaves (optional) and sprinkle over potato fries. Serve hot as a starter or a snack with tea or coffee. Consume immediately.
